
Quick, fit and tasty. Yes yes we keep that going. One pot dishes are the quickest. No meat? Cook even less ! If you are being constantly late person vegan and vegetarian dishes are best. You simply spend up to half less time on cooking.
I have got here multi veg simple stew where you can throw in any vegetable you wish. You can use it as a regular healthy meal or after workout if you are on the training mode. Chickpeas will provide great amount of proteins, if you want add more of them when cooking.
All you need is: (4 portions)

100 g chickpeas (soak overnight and cook or buy ready cooked, I recommend to cook)

1 medium courgette (cut on squares)

2 medium red peppers sliced

2 medium white onions sliced

150g chestnut mushrooms sliced

250g fresh any tomatoes ( pour hot water on the top, peel and blend)

1 inch chopped fresh ginger (or more)

1 inch chopped fresh chili (or more)

2 tbs cumin seeds

Himalayan Salt

2 tbs coconut oil
-
fresh coriander
Cook chickpeas in salted water and leave on the side.
Heat coconut oil on the sauce pan. Throw cumin seeds, chili and ginger and cook for minute – two. Straight after throw in all vegetables except tomatoes. Cook the veggies for 5 minutes stirring once for a time, keep them frying on high temp until al dente. Throw in ready blended tomatoes and cook on medium heat for another 5 minutes. Season well with Himalayan salt, take of the heat. After couple of minutes add fresh coriander. You can serve it on its own or with rice if you wish. Do not exceed hand full rice if needed. You can vary the dish making your own combination of vegetables like carrots, potatoes, cabbages, leeks etc
